bread dumplings with parsley and chives
For this simple dish not necessary to follow the dosage to the letter, if you like dumplings harder, putting more and more bread flour, but if you prefer them soft, wet with milk.
Needed:
3 to 4 medium sized stale sandwiches
2-3 tablespoons flour 3 tablespoons
00 Grana
1 egg 1 pinch of salt 3-4 tablespoons milk
nutmeg chives
parsley
For two people, I do: I
in a bowl with high sides (salad type) cheese sandwiches stale 4 (medium-large), add 3 tablespoons cheese and 2 of flour, an egg join, well previously beaten with a pinch of salt and bathroom with milk at room temperature.
mixing the dough with your hands, should be neither too dry (add milk if it did), nor too liquid (in this case, add flour).
Put in refrigerator to solidify for ten minutes / quarter of an hour.
removed from the fridge, mix well with your hands, forming a ball and sprinkle well with nutmeg and continue to knead add parsley and chives.
When the mixture is solid enough not to crumble, the shape of rolls, I put them on a floured board and cut them in small cylinders about 2 cm, as is done with the gnocchi.
The dumplings keep in a fridge, cooking just a couple of minutes.
Serve with plenty of melted butter (preferably good quality!) Liking and a pinch of nutmeg or pepper.
