squirrels & mushrooms



For a dinner with friends I made this cake with nuts, apples, chocolate and raisins. And those who eat nuts? Squirrel! And where do squirrels live? In the woods .. with lots of mushrooms and leaves.

for the cake:

175 gr. of butter at room temperature
140 gr. sugar cane
2 tablespoons strawberry jam 2 eggs
140 gr.
flour 1 tablespoon baking powder
1 teaspoon cinnamon
100 gr. coarsely chopped hazelnuts
50 gr. dark chocolate coarsely chopped 2 apples
a handful of raisins

In mixer combine butter, sugar and jam until smooth and creamy. Add the eggs one at a time.

Mix the flour, baking powder and cinnamon and add to butter mixture. With your hands mix the hazelnuts, chocolate, raisins and apples.

Cover and let rest in refrigerator for several hours or preferably overnight.

Place the dough in a loaf pan and bake in preheated oven at 170 degrees for 50-60 minutes.


for the loaf:

2 tablespoons strawberry jam 2 eggs
140 gr.
flour 1 tablespoon baking powder
1 teaspoon cinnamon
100 gr. nuts, chopped
2 eating apples, peeled, cored and chopped
a handful of raisins

Put the butter, sugar and jam in an electric mixer and cream until fluffy. Add the eggs on at a time mixing well.

Sift together the flour, baking powder and cinnamon in a separate bowl, then beat into the butter mixture.

Stir the nuts, chocolate raisins and apples into the mixture by hand.

Cover and refrigerate for a few hours or overnight if possible.

Pour the mixture into a loaf tin and bake in preheated oven to 170° for about 50-60 minutes.
