For my cookies I always use the same base of pastry, which is then can make several changes from time to time (chocolate chip, lemon zest, dried fruit ..).

For the pastry: 250 gr
. flour
100 gr.
sugar 140 gr. of room temperature butter into small cubes 1 egg

combine the flour, sugar and butter into cubes. Knead the ingredients until the dough is "sandy."

Add the egg and work until a firm dough.

Let rest in refrigerator for at least two hours.

Roll out the dough and cut with cookie cutters to make shapes that you prefer.

Cuocete in forno per circa 20 minuti a 180°.


For my cookies I use the same shortcrust pastry recipe every time; you can add extra ingredients if you like (chocolate chips, lemon zest, nuts..)

Add together flour, sugar and butter. Mix the ingredients with your hands until you reach a sandy consistency.

Add the egg and form a hard dough.

Let rest in the fridge for at least 2 hours.

Roll the tough and make the cookies with your favorite cutters.

Bake in preheated oven to 180 degrees for about 20 minutes.
